BBQ Shrimp Breakfast Tacos


 

I finally got a new charger for my DSLR camera battery, so I finally was able to shoot a food video with more precision – and the clarity feels great. For the recipe, I decided to do something a little different and venture into the breakfast arena. After letting my mind wander, I landed on a breakfast taco that incorporated a fair amount of indoor BBQ elements. The recipe and instructions are below and the video is above.

 

BBQ Shrimp Breakfast Tacos Recipe

INGREDIENTS

Potatoes:
0.5 lbs small red potatoes
1 Shallot Onion
1 Green Pepper
1 Red Pepper
3 Cloves Garlic
1 tbsp Cumin
2 tbsp Chili Powder
Salt and Pepper

Shrimp:
1/2 lbs Shrimp
1 small red onion
2 cloves garlic
3 tablespoons Old Bay Seasoning
1 teaspoon dried rosemary
1 pinch dried thyme
1 tablespoon sweet paprika
3 tablespoons brown sugar
2 teaspoons cumin
1/4 teaspoon allspice
1 teaspoon cayenne pepper

Eggs and Tortilla:
3 Eggs
1/4 cup milk
3 Flour Tortilla

Pico De Gallo:
20 cherry tomatos
1/2 red onion
1 jalapeno pepper
1/4 cup red wine vinegar
3 tablespoons olive oil
1 teaspoon garlic salt
1 teaspoon black pepper

 

INSTRUCTIONS

  1. Cut Potatoes into small pieces and place into skillet with diced shallot and garlic.
  2. Turn on 2 stove burners and place peppers on top of grid. Make sure to turn every minute or so.
  3. Take off burnt layer of peppers and dice. Add to skillet and cook for 10 minutes until potatoes are done.
  4. Peel shrimp and add to a bowl with dry seasoning.
  5. Coat shrimp and place onto a cooking sheet with olive oil, onion and garlic.
  6. Bake shrimp for 5 minutes at 350 degrees.
  7. While shrimp is cooking, whisk eggs and milk together.
  8. Remove shrimp from the oven and start to cook eggs, placing the shrimp along with onions and garlic into the eggs.
  9. Scramble eggs with shrimp until no longer runny.
  10. Again, turn on the stove stop and place tortilla over the open flame. Flip sides after 10-20 seconds.
  11. Add the scrambled shrimp eggs, pico de gallo and touch of the potatoes to the tortillas and enjoy!
